My life hasn’t exactly been a straight line. I was born in California, but I actually grew up navigating the vibrant, spice-heavy street markets of Karachi, Pakistan. When I was sixteen, my family packed up and moved back to the States. We didn’t head for sunny beaches, though. We landed in a place I couldn’t even spell on the first try: Schenectady, New York.

I arrived expecting the neon glow of the movies. What I got was a hardworking city where everybody’s dad—mine included—worked at GE, the winters required serious snow boots, and the local delicacy was a Stewart’s ice cream cone. I traded the heat of Karachi for the cold of Upstate New York, but there was one thing I refused to leave behind at the airport: the flavors.

Let’s get one thing straight—my culinary career didn’t start with a pair of tweezers in a stuffy, fine-dining kitchen. It started at Subway.

My very first real job in the States was training staff how to perfectly portion deli turkey and ensuring every footlong actually measured twelve inches. While I was teaching the corporate sandwich mechanics, my mind was miles away, wishing I could slip some fresh green chutney onto the bread.

Subway taught me the hustle, but my own kitchen taught me the soul of hospitality. Whether I’m cooking for two or providing full-scale event catering in Saratoga, a great meal is the ultimate icebreaker—it introduces you when you don’t know how to introduce yourself.
